MY FAVOURITE RECIPES

LEMON & OREGANO CHICKEN

Ingredients:

Chicken thighs or drumsticks

3 Whole lemons

Tbsp of brown sugar

Tbsp of Oregano

Pinch of salt & pepper

New Potatoes


Method:

Preheat oven at 180C. Place boneless thighs or drumsticks in an oven proof dish and season with salt and pepper. Use the juice of 2 whole lemons and pour over the chicken, sprinkle the oregano on top and a tbsp of brown sugar. Cut the remaining lemon into wedges and scatter around the chicken. Pop into the oven until cooked through (I do 40 mins). Serve with new potatoes and vegetables.

SCRUMPTIOUS KRISPY KALE

Ingredients:

Kale

Fry Light/Oil

Salt

Pepper

Garlic Powder

 


Method:

Literally the best snack ever, so healthy and yummy!! Spray or Oil a baking tray, chuck on your kale and then spray again or drizzle oil and sprinkle your seasoning and any herbs you desire on top. Pop into the oven for 10/15 minutes until crispy! Amazing honestly you'll love it the perfect little snack.

GORGEOUS GAMMON HOT POT

Ingredients:

Small gammon joint

1 can of chopped tomatos

2 or 3 carrots, 1 Onion

100ml of stock

1tbsp of tomato puree

2 or 3 potatoes


Method:

Boil a small joint of gammon for 1 hour on gas mark 3. When cooked cut into chunks, cut up 3 carrots, and 1 onion. Mix together 1 can of chopped tomatoes, 100ml of stock, and 1 tbsp tomato purée. Mix together and place is an oven proof dish. Slice potatoes into thick crisps and part boil for 5/10 mins with 1/2 tsp of salt. Place on top of the dish so it's fully covered. Pop into a pre heated oven at 180C for 40-45 mins, take out and grate cheese on the top and pop back in until melted. Serve with asparagus or green beans.

HEALTHY CHINESE

SATAY CHICKEN

Ingredients:

2 Chicken breast

2tbsp of peanut butter

4tbsp of soy sauce

Garlic puree or clove

Chilli powder


Method:

Fry off 2 chicken breasts using fry light (1 cal per spray, healthy alternative to oil!) season with salt, pepper and chilli powder. Add 2 healed tbsp of peanut butter, 4tbsp of soy sauce and 1 tsp of garlic purée or 1 clove of fresh garlic. When the chicken is cooked and the sauce is caramelised take out of the pan. Mix together 1 tbsp peanut butter, 4 tbsp of water, 2 tbsp of soy sauce and microwave for about 30 seconds on high and use as a sauce.

EGG FRIED RICE

Ingredients:

Fry light

Long grain rice

Spring onions

1 Large egg

1tbsp of soy sauce


Method:

Boil plain rice in a saucepan with 1/2 a tsp of salt. When cooked Frylight a pan, add the drained rice to the pan along with 1 egg and chopped spring onions. Mix the rice together continuously until the egg is cooked (you'll see the whites turn fluffy in the rice) and mix in 1 tbsp of soy sauce.

SALT & PEPPER PRAWNS

Ingredients:

King prawns

Smash

Fry light

1tsp of salt & pepper

1 egg


Method:

Pre-heat oven to 180C. In a bowl mix one egg, in another bowl add SMASH with 1 tsp salt and 1 tsp of pepper. Coat king prawns in the egg wash and then roll around in the smash mixture. Put on a fry lighted tray and pop into the oven for 25-30 mins. They are so yummy and you'd never guess it was smash!
